Mexican scrambled eggs on the BORA Tepan stainless steel grill

So delicious and a great way to start the day. 

For this recipe, we used the BORA Classic 2.0 Tepan and induction set. It’s such a great appliance (in fact, I love it so much I am going to have one in my own kitchen) and it is so versatile when it comes to cooking, virtually anything you can do in a frying pan you can do on the Tepan.

Serves 4

Ingredients

Butter for frying

1 small jalapeno chilli, deseeded in finely chopped

1 small red onion

1/2 red pepper

100g cherry tomatoes quartered

6 eggs whisked

Handful grated cheddar cheese

Sea salt and black pepper

Salad and fresh lime to garnish

Method

Melt the butter in the pan or on the BORA Tepan plate and begin frying the onion, chilli and pepper stirring occasionally for about 3 minutes to soften.
Move vegetables to one side of the pan or Tepan plate and add the eggs, then mix in the vegetables until the eggs are just cooked and add the cheese. Season to taste.
Serve with salad and a squeeze of lime.
