A classic loaf cake.
It's light, easy to make and moreish.
For this recipe, we used our Siemens microwave combination oven.
175g softened butter
175g caster sugar
175g self raising flour
1 tsp baking powder
2 tsp ground ginger
100g diced stem ginger
Grease and line a 2lb loaf tin.
Place the butter, sugar, self-raising flour, baking powder, ground ginger, eggs and 50g of diced stem ginger into a mixing bowl. Beat to combine in a food processor or electric whisk.
Pour the mix into the lined loaf tin.
Cook in Siemens microwave combination oven set on microwave combination 180 degrees C hot air and 180W microwave for 15 minutes.
Remove from oven, allow to cool and put the remaining diced stem ginger on top. Serve.
Serving suggestion: mascarpone cream - whisk 300ml whipping cream, 250g mascarpone, 1 tsp vanilla extract and 3 tbsps of icing sugar to soft peaks.
